Ginger Salmon (Cheri’s Recipe) March 24, 2010

One of my dear friends, Cheri, shared this wonderful recipe with me.   She even showed me how to make it while I was dining at her house!  Now, I would like to share it with you…

I am not a huge fan of ginger, but I really enjoyed this recipe because it has great flavor but the ginger is not overpowering.  This is all you need:

Salmon

Fresh ginger (you are going to cut off the outside and then grate it into the marinade)

Honey (1 tbs)

Teriaki and/or Soy (a few tbs, enough to coat the fish)

Lemon (squeezed)

Combine those ingredients and marinade the fish for a couple hours.  (More time = more flavor)

While I was marinading the fish, I decided to make Sweet Potatoes.  I baked them in the oven.

After baking the fish for about 10 minutes, I added asparagus to the oven.  Then baked for about 10 more minutes.

Here’s the finished product…

Oh, and even Agnes ate well… we added a little sweet potato to her dinner…
