On Sunday, I usually try to plan our menu for the week. In order to save money, my husband and I try to take left-overs for lunch at work. By cooking more than enough for dinner, we can make sure that we will have these prized leftovers. Of course, reality often changes my plans, but oh well.
I am trying several new dishes this week. Here’s the menu:
Monday: Potato, Cheese and Cauliflower Soup (perfect for leftovers)
Tuesday: Orzo and Black Bean Salad (with a little spice — yum!)
Wednesday: Salmon (or Trout — depends on the best buy) with Arugula Salad
Thursday: Spaghetti — perhaps with Pesto Tofu
Friday: Veggie and Chickpea Curry
I will post the results of these endeavors. I hope that Wednesday will be our only pesco-vegetarian dinner. Stay tuned…
