Here are some pictures of the Trout Arugula salad we made. The sauce/glaze is made from shallot, balsamic vinegar, vegetable broth, and olive oil. The original recipe called for bacon, but I left that part out. The arugula was de-lish! We really enjoyed this recipe! The trout also came with encrusted pumpkin seeds. Next time, I hope to try it with salmon!
